Chocolate Chip Zucchini Muffins

I love this recipe for three reasons:  (1) You can use applesauce OR oil (I know you can do this in most recipes but I prefer someone to try it out first!!)  (2) I like recipes that use cocoa powder instead of having to melt baking chocolate (read: laziness) (3) I can use goodness from my garden (zucchini).  Wait, make it four reasons I like it!! (4) It is super delicious.


Chocolate Chip Zucchini Muffins

Ingredients:
1 1/2 cups sugar
1 cup applesauce or canola oil
3 eggs
2 tsp. vanilla extract
2 1/2 cups all purpose flour
1/2 cup baking cocoa
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. baking powder
2 cups shredded peeled zucchini



In a large bowl, beat the sugar, applesauce, eggs and vanilla until well blended. Combine the flour, cocoa, salt, baking soda, cinnamon and baking powder; gradually beat into sugar mixture until blended. Stir in zucchini. Transfer to muffin tins. (approx. 24) 

Bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from muffin tins to wire racks to cool completely.

Chocolate Chip Banana Bread Muffins


Several years ago I was on a quest, a quest for a banana bread recipe without oil.  A good one.  Finally I found one I liked, and after years of tweaking I have come up with this.  I think it's pretty great and my family loves it too.  Thus, my long journey, over roads of bland tasting bread and valleys of hard as a rock muffins, is finally complete.


Chocolate Chip Banana Bread Muffins

Ingredients:

4 tbsp. butter, softened
1/4 cup applesauce
2 eggs
2 tbsp. milk
3/4 cup brown sugar
1 cup mashed bananas (2 to 4 medium bananas)
1 cup all purpose flour
3/4 cup whole wheat flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tbsp. ground flaxseed
1/2 cup mini chocolate chips


Directions:

Preheat oven to 350 degrees.  Beat butter, applesauce, eggs, milk and brown sugar in large bowl until smooth.  Add bananas and blend at low speed; then beat at high speed for 2 minutes.
In a seperate bowl, combine flour, baking powder, baking soda, salt and flaxseed; mix into batter.  Add chocolate chips and stir until combined. Pour batter into muffin tins.

Bake in preheated oven until toothpick inserted into center comes out clean, about 18-20 minutes.
(this can be made as a loaf also, just put it in a loaf pan and cook it for 55-60 minutes).

Muffins That Taste Like Donuts

Yummy plus easy plus fast equals perfect snack!!!



Ingredients:


1-¾ cup Flour
1-½ teaspoon Baking Powder
½ teaspoons Salt
½ teaspoons Nutmeg
½ teaspoons Cinnamon
⅓ cups Oil
¾ cups White Sugar
1 whole Egg
¾ cups Milk

FOR THE TOPPING:

¼ cups Butter
⅓ cups White Sugar
1 Tablespoon Cinnamon

Combine flour, baking powder, salt, nutmeg and cinnamon.
Combine oil, sugar, egg and milk. Add dry ingredients and stir only to combine.
Bake at 350 degrees for 15-20 minutes. Meanwhile, melt the butter in a bowl. Combine the white sugar with the cinnamon in another bowl.
Shake muffins out while still hot. Dip muffins in butter, then into the sugar/cinnamon mix. Let cool.

Banana Bread Muffins

This has been my go to banana bread recipe for about 5 years now. I know there are better banana bread recipes (MOM'S!!) but I really like this one a lot; I don't feel bad about serving it to my kids!!

Ingredients:

8 tbsp. butter, softened
1/2 cup applesauce
4 eggs
4 tbsp. skim milk
1 1/2 cups brown sugar
2 cups mashed ripe bananas (about 6)
2 cups all purpose flour
1 1 /2 cups whole wheat flour
2 tbsp. flax seed
4 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3/4 cup mini chocolate chips


Preheat oven to 350 degrees. Beat butter, applesauce, eggs, milk and sugar in large bowl until smooth. Add bananas and blend at low speed; beat at high speed 1 to 2 minutes.
In a separate bowl, combine flours, flax seed, baking soda and powder and salt; mix into batter. Add chocolate chips. Pour batter into muffin tins.
Bake at 350 for 18 minutes. Makes about 2 dozen muffins.

Sunshine Muffins

I'm not a huge fan of corn bread, but I LOVE these. Maybe because they're really cupcakes? Don't judge me.

Ingredients:
2 eggs
1/2 cup water
1/3 cup milk
2 tbsp. vegetable oil
1 pkg. (9 oz.) yellow cake mix
1 pkg. (8 1/2 oz.) cornbread/muffin mix

Combine the eggs, water, milk and oil. Stir in the mixes. Fill greased muffin tins half full. Bake at 350 for 18-22 minutes. I like to top them with honey butter. Y-u-m.
